1 Tbsp. olive oil
4 large chicken tenders
salt and pepper, to taste
1 large egg, beaten
1/2 cup panko breadcrumbs
1 cup grated parmesan cheese, divided
cooking spray
1/2 cup marinara sauce
4 thick slices mozzarella cheese
1 package Green Giant ® Zucchini Tots – Parmesan Cheese
2 cups multi-colored cherry tomatoes
1 Tbsp. olive oil
1/2 tsp. garlic powder
Preheat oven to 450°F. Lightly oil a sheet pan with olive oil (or spray with cooking spray) and place in the oven.
Season chicken tenders all over with salt and pepper.
In a shallow bowl, whisk the egg until homogenous. In a separate bowl, combine panko, ½ cup of the grated parmesan and a pinch of salt.
Working with one tender at a time, dip in egg, then coat in panko mixture and set on a plate or baking sheet.
In a small bowl, toss tomatoes in olive oil and sprinkle with garlic powder, salt and pepper.
Carefully remove hot sheet pan from oven and set chicken tenders in the center of the baking sheet.
Scatter zucchini tots on one side of the baking sheet and seasoned tomatoes on the other side of the sheet. Lightly spray tenders, Zucchini Tots and tomatoes with cooking spray.
Bake for about 10 minutes. Flip tenders and Zucchini Tots and bake another 10 minutes. Check to see if chicken is done, if not, bake for another 2-4 minutes, checking after 2 minutes.
Top each chicken tender with 2 tablespoons marinara sauce and a slice of mozzarella. Sprinkle tots and tomatoes with remaining ½ cup grated parmesan and place the sheet pan under the broiler for 1-2 minutes until cheese is melted.
Plate each chicken tender with Zucchini Tots and roasted tomatoes.
